1 butternut squash, peeled, deseeded and cut into wedges
1 large red onion, peeled (root in tact) cut into 8 wedges
1 tsp dried sage
2-3 tbsp olive oil
10 good quality pork sausages
Small handfull of fresh herbs, finely chopped
Preheat the oven to 200°C, fan 180°C.
Place the squash, onion wedges and dried sage in a large roasting pan and toss together with the olive oil. Add the sausages in among the vegetables, and roast for 20 minutes. Give everything a quick stir and roast for a further 10-15 minutes, or until the sausages are brown and the vegetables are turning golden at the edges.
Remove the roasting pan from the oven, add the chopped herbs, season with salt and freshly ground black pepper and serve.
