1 -2 medium red chillies (not too hot), deseeded and finely chopped
A bunch of fresh coriander, chopped
4 spring onions, trimmed and finely chopped
2 tomatoes, chopped
Sea salt, to taste (salt pig)
Black pepper (freshly ground)
Juice of 2 limes (3 if they are small)
3 ripe avocados
250g cooked and peeled large King Prawns
¼ cucumber, deseeded and finely chopped
Smoked paprika, to serve
Tortilla chips, to serve
Crudities, to serve
Sour Cream, to serve
In a pestle and mortar pound the chilli, coriander, spring onion and tomatoes to a rough paste, season with sea salt and black pepper.
Add a little cold water and the lime juice to make a loose mixture.
Mash in the avocados.
When you are ready to serve, add the prawns and cucumber and very gently mix together.
Taste and season again, if necessary.
Sprinkle over the smoked paprika.
Tip: To extract enough juice from limes, roll them on the work surface before squeezing.
