Avocado & Tomato Salsa Crostini


Makes 8-10 crostinis

Prep time: 15mins

1 white baguette
1 garlic clove
1 avocado, diced
150g cherry tomatoes, diced
½ red onion, finely sliced
2 tbsp olive oil
Juice of ½ lime
Salt & pepper to taste
A small bunch of fresh coriander, finely chopped (plus more for garnish)
½ tsp red chilli flakes (optional)
½ red chilli, finely sliced


Preheat the oven at 170C fan.

Slice the baguette in 2-3 inch thick slices. Cut the garlic clove in half and rub the baguette slices with them. Using a pastry brush, cover the baguette slices with a thin layer of olive oil. Place on a baking tray and bake for 8-10 minutes until golden brown.

In the meantime, combine diced avocado, cherry tomatoes, red onion, olive oil, salt & pepper, lime juice, coriander and chilli flakes (if using) in a bowl and mix gently.

Top the bread slices with avocado & tomato salsa, sprinkle with fresh coriander and garnish with thinly sliced red chilli pepper (if using). Serve immediately.
